Throw It Together: Easy Quinoa Salad
There are so many reasons I LOVE this quinoa salad from Love and Lemons!
First, I love any excuse to crack open my jar of pickled red onions (they are a staple in my fridge). It’s also jam packed with nutritious ingredients. I have been paying special attention to the idea that food is medicine. And this recipe checks so many boxes.
For instance, asparagus offers a great source of fiber and is packed with folate and vitamin K, both amazing for blood flow and bone health!
The quinoa also packs a punch with fiber and is filled with a ton of vitamins and antioxidants. And we can’t forget that it's a great source of protein, whether you’re a meat eater or not!
It’s SO easy to throw together and you can also make it your own by adding your favorite fresh veggies, a sprinkle of goat cheese, or a nice piece of protein on top.
My entire family loves it. Any time I see smiles around the dinner table knowing that what my family is eating is good for the soul and the body, I’m happy.
The Recipe:

Fresh spring veggies: dealer’s choice!
Fresh herbs: whatever you prefer, though I find that adding dill really elevates the flavor
Lemon juice and zest: for a little acidity and flavor
Extra-virgin olive oil: to add balance to the lemon and add some moisture
Pickled red onions: because, honestly, they should be added to everything
The creamy green goddess dressing: blend of Greek yogurt, tahini, more lemon juice, garlic, and herbs in a food processor or blender
A hard-boiled egg: In a tossed salad like this one, grated boiled eggs are best!
Salt and pepper
