Jo’s Easy Caprese Pasta Salad

I am admittedly not a chef, so when I find a recipe that is easy, quick to make, and also tastes delicious, I must share it with you!

This Caprese Pasta Salad has become a staple in our home and is one of my go-to dishes to bring to a party or event. The best part about this recipe is that it’s even better on the second day! I love a meal that you can make ahead without worrying if it will still hold up.

Ingredients:

·       1 lb penne pasta (or pasta of choice)

·       2/3 cup olive oil

·       2 pints cherry tomatoes

·       2 cloves garlic, minced

·       8-10 ounces mozzarella pearls

·       salt to taste

Instructions:

1.     Boil pasta in heavily salted water.

2.     Heat olive oil, minced garlic, tomatoes, and a dash of salt, and let simmer till tomatoes are tender.

3.     Turn off heat from the olive oil mixture and mix in the drained pasta.

4.     Add mozzarella pearls and refrigerate for at least 45 min.

Tip: Add a protein, like grilled chicken, to make it a complete meal.
