‘Love-ly’ Antipasto Pasta Salad

Nick is a sucker for pasta salads, so we always have some variation of this hearty side dish in our fridge. I love that it keeps for days and skies the limit for the different variations you can create! I picked up some cute heart-shaped noodles at the market and thought they would make for a fun Valentine’s Day-themed pasta salad. 

The ‘recipe’ is really what you make of it — Feel free to add or substitute any ingredients (because why not make this your own!). This is what I used to create this ‘love’-ly treat:

Ingredients:

1 lb of gluten free heart-shaped noodles
1 diced red pepper 
1 can of artichoke hearts
Handful of mixed cherry tomatoes (halved)
Handful of pitted black olives (chopped)
8 oz of fresh mozzarella pearls 
6oz fresh salami (diced large)
Italian dressing of your choice!

 

Directions:

Cook the pasta in a large stockpot of generously salted water until al dente. Drain pasta and rinse under cold water for about 20-30 seconds until no longer hot.

In a large bowl, combine the cooked pasta and antipasto ingredients. Drizzle the Italian dressing on top, then toss to combine.

Serve immediately or save in the fridge. It will keep for a few days.
