Slow Cooker Chicken
Ingredients:
• ½ cup low-sodium chicken broth
• 2 tablespoons olive oil
• 1 teaspoon kosher salt
• ½ teaspoon onion powder
• ½ teaspoon dried thyme
• ½ teaspoon ground paprika
• ¼ teaspoon ground black pepper
• ¼ teaspoon garlic powder
• 4 boneless, skinless chicken breasts
Instructions:
1. Mix the seasoning: In a small bowl, stir together the salt, onion powder, thyme, paprika, black pepper, and garlic powder.
2. Prep the chicken: Place the chicken breasts in the bottom of your slow cooker. Drizzle with olive oil and sprinkle the seasoning mix evenly over the chicken.
3. Add broth: Pour the chicken broth around (not directly on top of) the chicken to keep it juicy without rinsing off the seasoning.
4. Cook: Cover and cook on low for 3–4 hours or high for 1.5–2.5 hours, until the chicken is cooked through and tender (internal temp should reach 165°F).
5. Serve or shred: Serve whole with your favorite sides or shred for salads, bowls, wraps, or meal prep!
