Rebujitos & Family Roots

Spain is one of my favorite countries in the world. My family has roots in Galicia and I'm counting down the days to working there in the spring. Most of my favorite memories include food and drink in some way...I call them my 'delicious memories'. My last trip to Seville, I had my first Rebujito and I have not forgotten it. This light, bright cocktail is a perfect for an end-of-summer night and it's so easy to make!

Ingredients:

1 1/2 oz (high quality) sherry

3 oz club soda

Juice of 1/2 lemon

Juice of 1/2 Lime

Simple Syrup (to taste)

Mint

Directions:

Pour all of the ingredients into a shaker & shake well

Pour over ice and garnish with a mint leaf
