Jo's Abuela's Famous Spanish Omelette for the Holidays

I don’t know about you, but so many of my favorite childhood memories have centered around the dinner table, and my Cuban and Spanish roots formed almost all of the flavors of these beautiful moments. The holidays bring up so much nostalgia. We make time for family and those traditions that remind of us of where we come from. We have many traditional recipes in our family and one of the most simple and delicious was my Abuela’s Spanish Omelette. It wasn’t Christmas morning without that delicious egg and potato ‘tortilla’. And even though I am still trying to perfect it, there is something so heart warming about watching my family enjoy something that honors my Abuela and instantly takes me back to beautiful times.

Jo’s Abuela’s Spanish Omelette

INGREDIENTS:

  • 4 Potatoes, diced or sliced

  • 4 Eggs, beaten

  • 1 Small white onion, diced

  • 1/4 cup Olive Oil

  • Salt and Pepper to taste

INSTRUCTIONS:

  1. In a skillet, heat the olive oil over medium-high heat.

  2. Add potatoes and onions.

  3. ‘Fry’ until cooked thoroughly (about 10-15 min). I like mine to be a bit crispy!

  4. Meanwhile, beat eggs and add a large pinch of salt and fresh pepper.

  5. Once the potatoes and onions are fried, remove mixture and strain, removing the excess oil.

  6. Return the oiled pan to medium heat and add potatoes, onion, and eggs. to the skillet.

  7. Once your omelette has set up and mostly cooked through, it’s time to flip! Take a large plate and place it on top of the frying pan. Flip the omelet onto the plate and then slide the omelette back into the frying pan to finish cooking until golden brown on the other side.

  8. Once cooked, place on a serving plate and serve immediately!
