Turkey Sweet Potato Skillet

I love all things sweet potato- but better yet- I love how nutrient packed they are! Any excuse to use sweet potatoes in a dish, I’m all in! It’s been so busy for us lately from running the girls around to all of their activities, work, and keeping up with family and friends so meals that I can throw together in one pan that don’t take too much time is a MUST! This Turkey Sweet Potato Skillet is SO simple to throw together, requires minimal prep and perfect for the dinner menu during the week.

It also refrigerates beautifully so it’s a great one to prep for the week if you meal prep like we do during busy seasons!

Here’s What You’ll Need:

  • 1 pound ground turkey

  • 1 Tablespoon cooking oil

  • 1 medium onion, chopped

  • 1 shallot, finely chopped

  • 3 garlic cloves, minced

  • 1/4 cup tomato paste

  • 1 medium sweet potato, peeled and cubed

  • 1 cup chicken broth

  • 2 teaspoons smoked paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 3 cups chopped fresh kale

  • Dash crushed red pepper flakes

Instructions:

  1. In a large skillet, add oil and cook turkey, onion, shallot and garlic over medium heat until turkey is no longer pink and vegetables are tender. This may take you about 8-10 minutes. Be sure to break up the turkey as you go drain. Add tomato paste and then cook and stir for another minute or two.

  2. Add broth, sweet potato, smoked paprika, salt and pepper. Bring to a boil and reduce heat. Simmer, covered, until sweet potato is tender, about 10 minutes, stirring occasionally. Add kale and red pepper flakes and cook until kale is wilted.
