Chicken & Biscuit Dumplings

There’s no dish that makes me think of my mom quite in the way that chicken and dumplings does. It was her absolute favorite and whenever I see a dumpling, I can’t help but melt into my favorite memories of my mom. When I came across this recipe from Pinch of Yum, I knew I had to whip up my own little version of it. It’s not quite the traditional chicken and dumpling recipe but I know my mom would have loved this one.

Not only is it the perfect comfort dish during the chilly months, but it couldn’t be easier to or quicker to whip up! You could totally stick with the full recipe from Pinch of Yum, but I promise this simplified version is just as delicious!

Here’s What You’ll Need:

  • 2 tablespoons Zero Acre Olive Oil

  • 2 to 3 cups diced trio of celery, carrot, and onion

  • 3 cloves minced garlic

  • 1 large potato, peeled and diced

  • 1 lb. chicken breast

  • 1/2 teaspoon poultry seasoning

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 3 to 4 cups chicken broth

  • 6 refrigerated biscuits, cut into small bite-sized pieces

  • 1 cup frozen peas

Instructions:

  1. Heat the olive oil in a Dutch Oven over medium heat.

  2. Add in the veggies and sauté for a few minutes until softened. Stir in the garlic and potato.

  3. Add in the chicken breast, poultry seasoning, salt, and pepper. Give everything a good stir.

  4. Add in the chicken broth. Bring to a simmer, cover the pot, and cook on low for 15 minutes. Then, add in the biscuit pieces.

  5. Add additional broth or water to the pot if the mixture seems extra thick.

  6. Cover the pot, and simmer for another 15 minutes.

  7. Pull out chicken to shred or chop. Add it back in with the peas.
