Buffalo Chicken Meatballs

The big game is this weekend and I’ve been thinking about what I’m going to serve at our watch party for weeks! I LOVE football food and wanted to find a way to make some of our favorite game day treats a bit healthier. These Buffalo Chicken Meatballs complete with Primal Kitchen Buffalo Sauce and Ranch Dressing are so delicious, so clean, and best of all, they’re super easy to whip up!

The Primal Kitchen sauces really make this dish though! Made with ingredients you can actually understand and feel comfortable serving your friends and family, they should definitely be a staple in your condiments armory. You could toss the meatballs in the buffalo sauce or serve the sauce on the side to leave the dippin’ up to your guests.

Here’s What You’ll need:

  • 1 pound ground chicken

  • 1 egg

  • 1/2 cup panko breadcrumbs

  • 2 tablespoons olive oil

  • 1/2 teaspoon garlic powder

  • 1/2 cup chopped onion

  • 1/2 cup chopped carrot

  • 1/2 cup chopped celery

  • 1/2 teaspoon salt & pepper

  • 1 bottle of Primal Kitchen Non-Dairy Buffalo Sauce

  • 1/2 cup of Primal Kitchen Ranch Dressing

Instructions:

These instructions couldn’t be simpler!

First, preheat your oven to 400 degrees. Then, begin mixing all of your ingredients in a bowl aside from your sauces.

Scoop out about a spoonful’s worth of the mixture and roll it into a ball and place on your greased baking sheet.

Bake your meatballs for about 25-30 minutes. Once cooked, let cool a bit for a few minutes and then toss in the Primal Kitchen Buffalo Sauce! Coat generously.

Serve with carrot sticks, celery sticks, and Primal Kitchen Ranch Dressing.
