Refreshing Summer Cucumber Salad

There’s nothing better than a cold, refreshing cucumber salad in the summer! It only takes a few minutes to throw together and the best part- you can totally make this your own!

INGREDIENTS:

Cucumber

Corn (grilled or strained)

Avocado

Red Onion

Feta

Olive Oil

Lemon or Lime Juice

Salt and Pepper

INSTRUCTIONS

Cut your cucumber into medium cubes. I’ve found that slicing them releases too much water from the cucumber and can weigh down the salad a bit.

Peel and cut your onion into small pieces. You can dice them if you prefer.

Throw in your corn. I personally prefer to grill mine for a few minutes first, but if you use canned corn, be sure that it’s strained and dry.

Next, add your avocado pieces and sprinkle in your feta. I like to go a bit heavy handed here- because why not?!

Add about 2 tablespoons of olive oil, the juice of your lemon or lime, and then salt and pepper to taste.

Toss and enjoy!
