Cooking with Friends: Delicious White Wine Chili Pasta with Mandy

I mean… what’s better than cooking with your best friends?! Mandy and I whipped up this delicious White Wine Chili Flake Pasta the other night and it was just as easy as it was delicious.

Trust me, simple and easy is best when the wine and conversation are flowing with your best gal.

Ingredients:

  • 3 tablespoons unsalted butter

  • 3 tablespoons olive oil

  • 1 teaspoon red pepper flakes

  • 1 pound small yellow cherry tomatoes

  • 8 cloves garlic, finely minced

  • 1 cup white wine

  • Kosher salt and freshly cracked black pepper

  • Zest and juice of 2 lemons

  • 1⁄4 cup finely chopped fresh parsley

  • 10 ounces of Pasta of Choice

  • 1 cup toasted homemade chunky garlic breadcrumbs (recipe below)

Instructions:

In a large skillet, melt & olive oil.

Add the red pepper flakes and tomatoes and sauté until the tomatoes start to pop!

Add the garlic and sauté for about 30 seconds.

Add the wine, a pinch of salt, and plenty of black pepper, and bring to a simmer. Let the wine cook down for 2 to 5 minutes. Don’t forget to take a sip!

Add the lemon zest and season with salt and pepper. Sauté for 1 minute or so. Stir in the parsley and half the lemon juice, or more as needed. Toss to combine.

Cook the pasta according to the package directions. Drain and toss the pasta with the sauce and season with salt and pepper as needed. Toss with the breadcrumbs.

Serve and enjoy!

Breadcrumbs:

Cut a few slices of few day old french bread into small pieces. You’ll need about 1.5 cups total.

Sauté 1 tablespoon of olive and 2 tablespoons of butter in a pan.

Toss in bread and cook until brown. This should take about 3-5 minutes.

Add about 2 cloves of garlic, salt and sauté until fragrant.
