Buffalo Chicken Pizza Rolls

Fact: I will take buffalo chicken any way you give it to me. I’m always looking for a way to work my favorite buffalo chicken dip into a menu.

And wrapping that delicious cheesy, buffalo goodness in a pocket-sized dough nugget seemed like a no brainer! Turns out, I’m not the first person to think of this! There are a million different recipes that made my mouth water. After a few trial runs, I put my own spin on things and loved the way fresh mozzarella complimented the pizza dough crust and chicken mixture with that buffalo kick!

This recipe is SO easy. Pop them in the oven when guests arrive and serve steaming with a side of ranch.

Buffalo Chicken Pizza Rolls

  • Pizza Dough (I use fresh Trader Joe’s dough) 

  • 1-2 lbs of simply baked chicken (shredded) or 1 Rotisserie chicken (remove the white meat and shred!) 

  • 1 small onion chopped (Nick is not a fan of the texture of onions, but likes the flavor. So I use a small onion finely diced)

  • 3/4 cups Buffalo Sauce (I toyed with this measurement. You want your chicken mixture to be generously coated, but not runny!) 

  • 1 - 2 packages Fresh mozzarella (diced) 

  • Butter or oil

  • 1 bottle of Ranch or Blue Cheese dressing (I prefer ranch for this recipe!) 

    1. Saute diced onions in butter or oil over medium heat. Once transparent, add shredded chicken. Mix until evenly combined. Add buffalo sauce and simmer for about 5 - 7 minutes. Remove from heat and set aside.

    2. Preheat oven to 400. Lightly grease muffin tin. You can also use a baking sheet but I like how the muffin tin contained the stuffed dough. 

    3. Divide dough in half. Roll each half into two thin, large rectangles. 

    4. Spread chicken over the entirety of each rectangle. The closer to the edge the better! 

    5. Spread diced cheese evenly across each smother dough rectangle. Saving some cheese for the last few minutes of baking. 

    6. Starting from long side of dough, begin rolling as if your making cinnamon rolls. Then slice into 2 inch ‘rolls’! 

    7. Place in muffin tin or on greased baking sheet and bake for 15 minutes or when dough starts to slightly brown. Then add the remaining diced cheese on top of each roll. When it’s melted and bubbly, you are ready to serve. 

    8. Arrange on a platter with ranch or blue cheese dressing and prepare for your guests to go wild!
